I’m all about a one pot/dish meal that the whole family will eat. This Creamy Baked Orzo with Meatballs is one of those meals. It calls for tomato soup, which I usually don’t have. But, I do usually have some kind of spaghetti sauce. I’ve made it with both and it’s good both ways. Honestly, with the tomato soup, it looks like I dumped several cans of Chef Boyardee in a Pyrex and baked it. But, I think the orzo cooks better using the tomato soup. The taste is pretty much the same either way. I’m usually not fancy enough to have fresh basil on hand when I do have it, I’m the only one who wants it. So, you can do without that too. I’ve never added the cherry tomatoes. What I’m saying is, this meal is pretty cheap because it doesn’t require much. Plus, it’s thrown together and mixed up right there in the pan it bakes in. So quick. Pro Tip: Publix thinks a lot of their orzo. Trader Joe’s has the best price.
I do not work out in a gym. I walk most days and try to do strength training 2-3 times a week at home. I found this arm workout from Caroline’s Circuits on Instagram that BURNS even with 3 lb weights. I do this at least once a week when I just need to squeeze something in or I’ll do it after a walk. “Don’t save the good wine.” On a recent podcast I listened to, a guest shared a story of her mom who was dying from bladder cancer. A few days before she died she told her daughter where she kept the bottles of good wine in her house. Her mom said she’ll never know how the good wine tastes because she was saving it. This was an encouragement to not save what’s best for another day. Use it now. Live in the present and be intentional. I listened to that podcast as I was making the orzo meal from above. I invited my parents over to join us for dinner…ya know, to live in the present and be intentional. I was inspired. “Don’t save the good wine” translated to “why eat leftover homemade Chef Boyardee later when you can share it with your parents now?” Mom said they had just put steaks on the grill. Oh ok, cool. Steaks > Chef Boyardee. Maybe I should have used the fancy fresh basil.
